Description
This natural lot comes from Gotiti, in Gedeb woreda, and is processed at a drying station in Banko Gotiti that is exclusively rented and managed by Ephtah Specialty Coffee. The site sits at approximately 2,150 to 2,200 metres above sea level, with this lot recorded at around 2,200 metres above sea level. Coffee is grown naturally under indigenous shade trees, including Ensete ventricosum, commonly known as false banana. The coffee is made up of local heirloom cultivars and is purchased from an exclusive supplier working with nearby farmers during the late November to January harvest period.
At Gotiti, the best cherries are purchased from nearby farmers and are first floated to remove lower-density cherries and quakers. The coffee is then placed on raised drying beds and dried for around 12 to 15 days. Once dry, the green coffee is handpicked by local women to support quality and consistency. The site covers approximately two hectares and has around 150 drying beds.
